Oh yes, this is yummy! We purchased a whole NY Strip Loin which we cut for steaks; the remaining pieces were sliced into thin strips and placed in the freezer for use another time. Well, tonight is the night I’m making them into this lovely Peppered Beef Strips with Rice and Broccoli. The marinade is simple, and the recipe equally easy to do. I hope you enjoy it.
2 tsp minced garlic (or garlic powder)
1 tsp minced ginger (I used ground ginger)
1 cup rice
1 cup beef stock (I use homemade)
1 lb. NY strip steak strips (or any steak thinly sliced into strips)
1/3 cup red wine
1 tsp course-ground black pepper (or more to taste)
2 tbls soy sauce
1 medium onion, diced
1 cup broccoli florets (I use fresh)
In the morning, marinate beef stips in wine, pepper, soy sauce, garlic, ginger and beef stock; cover and set aside in the refrigerator. When ready to cook, steam, or cook rice until done; cover and keep warm. Saute’ onion in large skillet over medium heat (sprayed with cooking spray of your choice). Reserving marinade, remove beef and stir fry in skillet with onion approximately 3-4 minutes. Add marinade and bring to a boil, stirring to thicken slightly. Add broccoli florets and cook just until al dente. Serve immediately over cooked rice.
